Easy Recipe For Low Carb Hummus

Note: this low carb hummus recipe is not suitable for people on Atkins Induction or other plans that don’t allow eating peas and beans. To make it lower in carbs, serve with sliced cucumber and zucchini (courgettes) instead of carrots.

Most of the food I cook is a very simple combination of protein, vegetables and olive or coconut oil. Here’s one exception where I actually follow a recipe – a very simple recipe!

Weight: lost 4 lb in the past 2 weeks (17.5 lb lost in 6 weeks)

Measurements:
Waist: lost 1/2 inch this week, total 2.5 inches in 6 weeks
Hips: lost 1/2 inch this week, total 0.75 inches in 6 weeks

Body fat: now in the healthy range! 🙂

Last weekend was Easter and I wasn’t home. Being separated from my trusty electronic scale, I decided it was better not to weigh myself. Scales can vary so much, and the one at my mother’s house is very old. I grew up with it! So I skipped record keeping last week.

Weight: 1 lb gain this week 🙁 (13.5 lb lost in total)
Measurements: no change
Body fat: no change

I know exactly what went wrong this week. It wasn’t the Unleash Your Thin program, it was me. I was doing fine – in fact I had lost 2 lb – until the middle of the week. Then I fell on ice and hurt my back.

I had to take ibuprofen and I couldn’t find a brand that didn’t contain sugar. Suddenly I was having huge cravings. I ate a week’s nut rations in one day and the next day was worse.

But I stopped taking the ibuprofen yesterday and got back on track.
